This recipe for fluffy marshmallow icing is the perfect topping for any cake, cupcake, or cookie sandwich. I would even dip my strawberries or other fruit in it! My Grandma Ila made this icing over a cheery chocolate cake but I was more excited for this icing than the cake! It was such a treat to be at grandmas house for many reasons. It’s been over 20 years since I’ve sat in her kitchen and this icing takes me right back to her house.
This sweet marshmallow icing has great texture and form while being light and creamy.
Gather the ingredients, a medium size pot, and an electric mixer.
Ingredients:
3/4 cup white sugar
1/4 cup light corn syrup
2 large egg whites
2 tablespoons water
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 tsp vanilla
Next add the ingredients (except the vanilla) to the pot. Set the temperature of the pot to medium low and beat the ingredients at high speed for one minute
After one minute turn the temperature on the pot down to simmer and continue beating at high speed for the next 7 minutes. Trust the process! For the first few minutes there will be bubbles in the mixture and that is a clear sign it is not done. Then it will turn white and creamy but doesn’t hold its form. Keep going!
You will know the icing is done when you shake the icing from the beaters or a spoon and it doesn’t fling off.
Now add your vanilla and beat just until mixed in. Congratulations! You have the most amazing fluffy marshmallow icing with so much potential. Have you considered what this icing would be like if added to a s’more? Yum!!
